Chicken + Egg Salad on Texas Toast

This high-protein sandwiches combines two lunchtime favorites: Chicken Salad and Egg salad into one, flavor-packed healthy lunch or dinner.  This healthy salad sandwich is the perfect light summer snack.  We used Classic Cookstix for flavor along with tons of fresh herbs.  Pro Tip: Potato Chips nestled in the sandwich offer a delicious and delightful crunch!

Chicken + Egg Salad on Texas Toast

Ingredients

1 Classic Roasted Chicken Cookstix
1 large cooked chicken breast, pulled 
2 eggs, hardboiled, then peeled and chopped 
4 Tablespoons mayo
2 Tablespoons grainy mustard
¼ cup fresh dill
¼ cup fresh basil  
1 small shallot, peeled and minced
2 stalks celery, diced small
3 large colorful radishes, diced small
½ lemon, zest only
8 slices of thick bread 
Lettuce, Tomato, Onion, Chips - optional

Preparation

Combine all ingredients except bread in a bowl and stir to combine.  Season to taste - you may not need salt so taste before you season.  Build your Sandwiches: heap the egg-chicken salad on one side of bread, top with lettuce, tomato, onion, potato chips (all optional).  Top with a second piece of bread and dig in!
